Fujisaki is the new modern Japanese restaurant and bar by Lotus Dining open at The Streets of Barangaroo.
Head chef Joey Ingram delivers his take on Japanese cuisine featuring a menu led by the seasons and emphasising the customised robata grill.
The raw bar has some of Australia and NZs finest seafood to put on a show, cutting, blowtorching and shaping each mouthful of sushi and sashimi.
Fujisaki’s 300+ strong list is curated by sommelier Annette Lacey and the wines are housed in fully humidified and temperature-controlled wine room. There’s also a large range of sake, whiskies and cocktails.
The 140-seater takes advantage of habour views with indoor and outdoor seating and has three private dining spaces, including a tatami room, to cater for the local corporate crowd.
Fujisaki’s wine selection showcases our passion for marrying both Western and Eastern traditions. The 300 bin strong list allows diners to enjoy a vast array of styles which have been selected to compliment the Japanese inspired dishes. Under the guidance of Sommelier Chris Entwistle and his team, you will explore a diverse range of delicate, aromatic white varieties, see an extensive range of wines from both the classic regions, and interesting selections from all over the world. The reds range from lighter, fresher styles through to fuller wines, from both emergent local and international producers, to suit every palate and marry with the food. The use of the Coravin system, allows premium wines to be offered, to complete the wine experience for our guests.
Sake plays a large role in the list, with a large array of different styles produced, using a variety of time honoured methods to enjoy as an aperitif or through the entire meal.

Designed by Head Chef Joey Ingram in collaboration with our sushi and robata chefs, Fujisaki is proud to introduce our guests to a modern and innovative Chef’s Table dining experience. Working closely with our fishmonger we are able to offer a selection of ethically, wild caught and sustainably farmed seafood’s from Australian and New Zealand waters.
The menu is tailored daily, based on the absolute freshest produce available. It typically includes several seafood-focused appetisers, a selection of yakiniku dishes grilled over our binchotan-fuelled robata grill and an intimate nigiri offering, served directly from our skilled sushi chefs.
